Random Dinner Photo - Nutritional Yeast
This was my first use of nutritional yeast, which many vegans use as a “cheese-like substitute”. This brand is fortified with B12 and is how I make sure I get that into my diet since I rarely drink fortified soy milk. Nutritional yeast has a similar consistency to parmesan cheese, and gets sort of melty and sticky the way parm does when you sprinkle it on top of hot food. It is less salty and has a much more nutty and earthy flavor, however. I’ve read that you either love it or hate it. My first try I liked it, by my third try I loved it. It mixes well with garlic and pepper flavors, which is what I did with this bowl of pasta with roasted broccoli, asparagus tips, and a dab of Smart Balance.

I have used nutritional yeast to get more nutrients to my kids. You know what hides it? Mac and cheese. Oh yes, they have no idea they are getting a boost of nutrients in that bowl of organic mac and cheese.
Some vegan friends of mine make a hamburger helper sort of casserole with it (using soy crumbles of course) If I can find the recipe they sent me, I’ll send it your way!

have you watched bbc’s “you are what you eat”? an episode i watched this week featured a roasted red pepper & soy cheese dish. slice a red pepper horizontally in half. fill it with soy cheese and reassemble. cut off the stem. put a little more soy and a tiny tomato slice on top to keep the cheese from bubbling over. roast for about 5-10 mins. it was made as a substitute for the grilled cheese sammies that this particular client loved so much. it looked yummy! the downside is that red peppers are running over $2 here. i think i shall still try it this weekend though.

hey! so, this comment isnt directly related to this post, but kinda close! today i was in whole foods and i got to the soy meats section and saw their wide variety of yves products. i quickly flashed back to your post which talked about the yves bologna, so i thought I’d give an yves product a try! so, i got the pepperonis and htey were SOOOO good! i put them in my “quesadilla thingy” tonight and they added such a good flavor! anyways, this leads into my new question!
are you fully vegan, or when you have the chance, do you generally just prefer/tend to eat vegan-ly?
do you eat soy or rice cheese? or other non-dairy, “dairy” products? i’m just curious because i got really inspired when I got to whole foods and saw how “easy” it seems to be vegetarian and also to be vegan, will all the amazing substitutes they have! also, if you are fully vegan, is there some vegan egg product i dont know about? or do you just skip eggs all together?
ahh sorry for all the questions, but im very intrigued by all of this, and I feel like you definitely know your vegan products, and have had great success with them!
