Ingredients
1/2 cup Libby’s canned pumpkin
4 tablespoons evaporated milk
5-10 ice cubes
1/2 banana
5 tablespoons water
Directions
1Throw all ingredients in Blender.
2Dont overblend, you want it like a consistancy of melting ice cream.
3Drink immediately.
Or…Use 1/2 a frozen banana instead of ice , FF milk instead of water & add 2 Tablespoons of Wheat Germ. With the addition of the wheat germ it adds 2 grams more fiber, making it more filling.

Favorite Menu: Fish Tacos

YUMMY
I *LOVED* these!
2 Corn (hard) Taco Shells (I used Old El Paso Stand ‘n Stuff)
1/4 cup Black Beans, rinsed and drained
1/2 cup Pace Picante Sauce, divided (hot, medium or mild)
2 leaves Romaine Lettuce, chopped
2 oz. Talapia, pan-grilled in cooking spray, chunked
1 slice onion, chopped
1/2 cup mini carrots, matchsticks or shredded coarsely
10 large green or black olives
1 Tangerine
Heat black beans with 1/4 cup Picante Sauce and mash together. Spread the bean mix into the heated Taco Shells. Top with lettuce, fish, onions, carrots and remaining picante sauce.
Serve with olives. Fruit is for dessert. Very tasty and satisfying.

Dolphin-Friendly Mock Tuna Salad
* 1 15-oz can garbanzo beans ( chick peas )
* 1 stalk celery, finely chopped
* 1 carrot, grated (optional)
* 1 green onion, finely chopped
* 2 tsp. mayonnaise or mustard
* 1 tbsp sweet pickle relish
* 1/4 tsp. salt (optional)
Mash the garbanzo beans with a fork or potato masher.
Leave some chunks.
Add the sliced celery, grated carrot, chopped onion, mayonnaise and relish.
Add salt to taste.
I made them today and had with some crackers. I do love the chick peas, but it doesn’t even have pea flavor in it at all.
Really tastes like tuna salad. I used mustard, and no mayo.

I make a batch and have them with a glass of skim milk for breakfast. You can leave out the splenda if the banana is super ripe. Or add apple sauce with no sugar instead of banana. Mix the ingredients together and spoon by teaspoon into cookie sheet (sprayed with Pam) and cook 10-15 minutes in 350 degree preheated oven. (I don’t even use almond flavoring and it’s still very yummy)
1 cup uncooked (old fashioned) oatmeal
1/4 tsp salt
1 ripe mashed banana (the riper the better)
1 egg white (or 1/4 cup egg sub)
2 packets of Splenda
1 TBSP of cinnamon
1/4 tsp vanilla extract
1/8 tsp almond flavoring
