Pumpkin Fiber Shake

Ingredients
1/2 cup Libby’s canned pumpkin
4 tablespoons evaporated milk
5-10 ice cubes
1/2 banana
5 tablespoons water
Directions
1Throw all ingredients in Blender.
2Dont overblend, you want it like a consistancy of melting ice cream.
3Drink immediately.

Or…Use 1/2 a frozen banana instead of ice , FF milk instead of water & add 2 Tablespoons of Wheat Germ. With the addition of the wheat germ it adds 2 grams more fiber, making it more filling.

Fish taco

Favorite Menu: Fish Tacos

I *LOVED* these!

2 Corn (hard) Taco Shells (I used Old El Paso Stand ‘n Stuff)
1/4 cup Black Beans, rinsed and drained
1/2 cup Pace Picante Sauce, divided (hot, medium or mild)
2 leaves Romaine Lettuce, chopped
2 oz. Talapia, pan-grilled in cooking spray, chunked
1 slice onion, chopped
1/2 cup mini carrots, matchsticks or shredded coarsely
10 large green or black olives
1 Tangerine
Heat black beans with 1/4 cup Picante Sauce and mash together. Spread the bean mix into the heated Taco Shells. Top with lettuce, fish, onions, carrots and remaining picante sauce.

Serve with olives. Fruit is for dessert. Very tasty and satisfying.

CALORIES 410, CARBS 51, FAT 12.1, PROTEIN 21.5, FIBER 7.2

Workout for 7-25-08

Yeah.. I realized that I skipped the entry for 7-25-08…So here it is.

Realization

So I was driving the other day from work… I think a lot when I am coming home from work to keep me awake. And I realized! I passed my weight I was at last time I lost weight. You may think, HUH? See, when I was pregnant, I actually lost weight and by the time I had her, I was at 175. Then I gained and ended up 203. I then lost weight with Weight Watchers and ended up 187. I gained it all back and some more…. and edned up at 208. Now I’m below 187… :)

YAY! Oh, and I posted pictures. I wanted to have Pictures Page to show my progress. So Check it out. :)

Workout for 24-Jul-08

This is the fourth day I’ve been on the work-out plan. I had hard time starting today because my DD was fighting to go to nap soooo bad…and I work out when she’s taking a nap. But she finally gave in: one second, she’s going “I don’t wanna go night night.” and the next second, I don’t hear her. lol. I’m all pumped up from doing the workout. :) Yay!
