   I feel ready for bed and it’s only 8:15!! It seems like since I started eating healthier, I’ve been getting tired a lot earlier in the evenings. But there’s always laundry to be done and hyper kids to corral…. dinner was interesting tonight… long story short, I cooked two complete dinners (the normal thrill of pretending to be a Chef didn’t really help much tonight). I made a lovely salmon fillet for me and hubby, which he refused to eat after one bite, asking “where’s the crackers and why is it not in a pattie form?” The kids didn’t even think it was funny that I suggested they try the salmon. They asked very nicely for tacos.

Thursday Afternoon….

….Well, mum and dad were here for lunch.

What I’ve had so far today:

Breakfast: Orange/Pummelo/Lime Smoothie;   2 Eggs

Lunch: Meatloaf, Mashed Potatoes made with Sour Cream and Butter, Sauteed Asparagus with Green Onions, Salad of Baby Greens with Olive Oil/Red Wine Vinegar Dressing

 Oh yeah, I promised to report on how the “crunchy-salty-healthy(?) snack turned out last night:    It was terrific! I only wish I had measured ingredients and counted the calories as I made it. It is so simple! Here’s the recipe: (I’m guessing at the measurements)

                  3 cups Shredded Wheat and Bran Bisquits (I think it was Post brand)

                  4 Tbsp. Olive Oil + 1 Tbsp. Butter

                   1 tsp. Sea Salt + 1 tsp. Seasoned Salt (or whatever seasonings you like)

             Heat oil and butter together in Dutch Oven type pan until butter is melted - stir in

            seasonings. Add Cereal bisquits and toss to coat. Put into 9×13 pan and bake at 250

            degrees for One Hour, stirring every 15 minutes. Enjoy!!!
