Deceptively Delicious
Days like today are the ones that I like. The day is sunny, I don’t have to go anywhere. I can sit on my butt and not do anything-well, except I have a TON of homework to do and there si of course some housework to be completed…and I have to go to class tonight. but for the most part the day stretches before me like an unread novel, waiting to be explored and enjoyed.
So the plan for today is to stay OP. I did okay yesterday. I stuck with my meal plan until class time. I had planned to eat BEFORE class, but ran out of time finishing my homework and stopped at a convenience store (never a good option) and bought my Evian. i was pleased to see that this conveninece store had added a small section of health bars. There were nature valley and Special K bars. Yay! i already had a Special-K bar in the car so I chose a rice crispy treat. Not bad fat & calorie wise, though they are empty calories. i figured i was armed and ready for the munchies that would unwittingly attack me during class.
So I am fine at first, but then the munchies hit. I realized I had left my special K bar back in the car and pull out the rice crispy treat. I devour it and am still ravenous. During break I run up to the vending machines and there is some type of health bar. I think it was NV…but can’t rememebr. It was peanut…170 calories, and deliciious! So purchased that and another rice crispy treat. After I ate the peanut bar, I wa satisfied until I could get some food after class. Not much is open after class, but BK is. I chose a BK veggie burger, and onion rings. BK doesn’t have any real good choices as far as veggies go. i figured at least onions won’t turn to sugar in my body like potatoes do. The veggie burger was Awesome and I am planning on having another BEFORE class this time, and instead of the onion rings I am gonna buy a salad from Wendy’s or somewhere to eat with it.
I bought that Deceptively delicious book for $7 at a school sale. It was clearanced, so i got a great deal. iI am not really all that happy with it though. I made brownies and chicken nuggets using the recipes the other night. I cooked for over 2 hours, and that was without doing the puree-ing! I just bought baby food and used it in the recipes. The brownies were at the low end of okay. They were not very sweet (which I guess is the point), but my kids- all except DD didnt like them. I even put confectioner sugar all over them to make them sweeter, but it was still a flop. I also make the chicken nuggets. They went over better with the family. They were actually very good. I made them using sweet potatoes. I thought that you would bake them and was mortified at the end of the recipe to see that I was suppose to fry them!!!
How is that healthy??? I was mortified. Of the breading that contained the sweet potato some of it fell off some of the nuggets while they were frying. I can’t see how anyone is getting any kind of nutrition from the sweet potato when you are frying it anyway. So I am a little disenchanted with the whole concept. There is only enough veggies in an ENTIRE recipe to fill DS4’s veggie requirements, forget that you are serving it to 6 people! I guess it might help with someone like DS16 who eats NO VEGGIES at all unless it is a french fry…but he can detect a veggie item from a mile away, so getting him to eat it is like pulling teeth and I thought that was what this book was suppose to prevent. IDK… I may try a few more recipes, but if they don’t go over any better then I think I will sell the book on ebay. Plus these recipes take entirely too long to fix! I slaved away in the kitchen for over 2 hours to make 2 items…Not very time-effective when you have a busy life and a family to take care of. Jessica Seinfeld must cook in the kitchen all day-or more likely she has her chef follow her recipes! ![]()
So today is housework, homework, watch Days, and try to get some sort of workout in. Leave for class, make a few stops to pick up a healthy dinner, eat it while driving, pay attention to my body and it’s hunger cues, and learn something in class.
