My husband

Ah, my beloved husband.  He has brought me home a gift yesterday.  This time it is chocolate chip cookie dough.  He thought Chinese food didn’t fit in the diet, so it must be okay to bring me something sweet.  Always bringing me gifts, too bad they are almost always food.  The weekend before I fell off the boat I asked him if he was deliberately trying to sabotage me.  He said no, and I believe him.  He said that he just likes to make me happy, and food makes me happy.   That’s a sad statement about me.  Food makes him happy too, and when I am dieting he is forced to eat healthier as well.  That week, three nights in a row (Wed-Fri) he asked me each night if he should order pizza.  Finally I gave in.  I love him dearly, but he is very frustrating.  I am going to have to suggest he bring me home something else, like flowers, or at least sugar free chocolate.

So I’m back.  Weak willed though I am, I think I will make it through today.  If I can get through one, then it will be so much easier for the next day.  I have a lot of excuses, parties, holidays, my husband, but I really want to lose weight.  This upcoming weekend is another bridal party.  I dread it.  Part of me says, why bother trying now?  You this up coming weekend you will end up eating too much, what is one more week before then?  But If I wait until next week, it would only be two weeks until my Mom’s birthday.  After that it is only 3 weeks until Labor Day and then 1 week until my sister’s wedding, followed by only two weeks until vacation.  Then only a 2 months until the holiday season… and by then I might as well wait until next year. Such a trap, family gatherings, holidays, vacations; they are all evil.  I could boycott all events where food will be present.  Wishful thinking I know.   I’ve even considered eating before going anywhere to make sure I don’t have to eat at the event.  But like that would really happen.  Then I would just end up eating twice.  I’ve already almost caved twice today and it’s not even dinner time.  I just don’t know what to do other than sewing my mouth shut.

Ingredients

  • 1 (18 ounce) box spice cake mix  - I used Betty Crocker
  • 15 ounces pumpkin
  • cup water

Directions

  1. Preheat oven to 350 degrees.  Spray a 12 x 16 (11 x 15 will work too)cookie sheet with nonstick cooking spray.  Or, my preferred method, put a piece of parchment paper on the bottom of the pan.  
  2. Mix all ingredients in mixer.
  3. Spread on the cookie sheet. 
  4. Cook for 20-25min at 350 degrees.   If you use the smaller pan it will take a little longer because it will be thicker.
  5. Let cool, then cut into 24 bars.  You can store them in a sealed container on the counter for a couple days, but they are very moist so I would recommend putting them in a sealed container in the refridgerator.
  These are very yummy and sweet/moist enough that they do not need any icing.

Weekend didn’t go well, but at least it didn’t go bad either.  I could have lost more weight than I did, but I did not gain any more.  Onward!
