Oh, Cooking Light, how I love thee. Let me count the ways….

In my opinion, Cooking Light’s recipes are a gold mine. I just discovered it a little over a week ago and I have already tried about six recipes. The ones above are my favorites so far, but nothing has been disappointing in the least. The citrus chicken not only plates well on a bed of fresh spinach, but it tastes great too! I was a little skeptical of that one until I tasted it, thinking the spinach would end up more as a garnish than anything else, but this was not the case. The raw spinach and the citrus chicken was a perfect pair. All four kids loved it, and there is such beauty in your children consuming spinach. The tomato soup is very basic, but I really liked the simplicity of it. It felt fresh and light and was a great accompaniment to the calzones which I served with it.
More praise for cooking light is the use of many spices, thus adding a flavor punch to food without knocking out your grocery budget. I truly love food and I love to cook - have I said that before? - and there is something about the Cooking Light recipes that have really made this healthy eating thing more fun and exciting for me. For example, the beauty of a fresh lemon. Maybe I could achieve a similar taste by pouring it out of a bottle but when I am trying to train my brain to crave more healthy foods, I love the brightness of the lemon and the idea of using more ingredients from their natural form. Lemons really are like a little ball of cheerful sunshine if you think about it. Makes me want to have a bowl on the table just to look at.
So cheers to Cooking Light for the quality of their recipes, for making their recipes available online and for being the biggest source of motivation for me as I attempt to make the lifestyle changes that I have to make so that my habits don’t further contribute to an achy breaky heart.
